Taiwan received assistance through United States aid programs during the Cold War period, particularly under United States Agency for International Development (USAID) to combat undernutrition in school-aged children. Such programs helped introduce dairy into Taiwanese diets. Now, nearly every elementary and junior high school student participates in school lunch programs, and masterful chefs have emerged, competing for the approval of both the parents and the students.
